About Zircon Azul
Pascual Jaime, the founding father of Zircon Azul Tequila, drank a shot of plata tequila every morning after breakfast. The majority of days, it would be the only tequila he drank. From 1905 to 1935 Pascual worked for the Sauza family, ultimately becoming the quality control manager and supervising the family’s blue agave plantation. He felt that by tasting the distillation of the blue agave plants before going to work, he could better understand and care for them. The Sauza family had sought someone to steward their agave fields, and no one knew more about the cultivation for the Weber Blue Agave plant than Don Pascual.
During the Mexican Revolution, one of the Emiliano Zapata’s battle cries was, “The land belongs to the people who work it.” Don Pascual became an influential leader in Ejido, a movement to return the communal lands to their rightful stewards. As a result, he was granted a fine parcel in the highlands where the best Weber Blue Agave is grown. It was then that Don Pascual began producing his own tequila.
The ancient native people of Mexico believed the agave was a divine plant, the earthly presence of the goddess of fertility, Mayaheul. Pascual Jaime cultivated his plantation using only the most reverent and natural methods. Where other growers used pesticides to keep their agave fields weed-free, Don Pascual grazed a remuda of horses in his fields and fertilized organically.
At first, the tequila Don Pascual made was only for family and friends. Over the years, he developed his unique process for its distillation. This recipe and his biodynamic cultivation practices were taught to his son Carlos, who, in turn, has passed it on to his own son, Manuel.
The traditional Mexican tequila is the clear plata. European influences introduced the “resting” processes that resulted in the reposado and anejo tequilas. With only the slightest variation, the Zircon Azul tequilas distilled today by Don Pascual’s son and grandson are true to the spirit of the man who knew the most.
